Today we went to Parr Field and harvested our first batch of “green” beans, about 5.5 pounds. Many of the beans have already escaped our attention and were too mature to eat as green beans so we left them to form seeds. Anyway we need to replenish our seed stock. We also harvested about 6 calabasitas (immature squash) and a big bag of alberjon (peas).
For now we just put the beans in the refrigerator, but the process they will go through in the next couple of days is to blanch them for 3 minutes in boiling water, then taking them out and immediately putting them in an ice bath to stop the cooking process, and then letting them dry a little bit before they are placed in plastic bags and placed in the freezer for later use. We will cook them during the school year for our students’ lunch at Chrysalis High School.
The only bummer is that when you blanch these purple “green” beans, is that they lose their purple color and really become green beans!
